All Year Christmas Rice

Serves 8
Hands on time: 20 minutes
Cooking time: 25 minutes

3 cups Water
1 cup White Wine       
2 tbsp Chicken bouillon granules
1 Large onion, chopped
2 cups Long grain rice
2 cups Shredded parmesan cheese
1 cup Frozen peas
1 jar Roasted peppers, (7-ounce) drained and diced
2 cloves    Garlic, minced
Chopped fresh parsley for garnish, optional

1.    Place the water, wine, chicken base, and onion in a 4-quart saucepan; bring to a boil

2.    Add the rice, reduce heat, cover with a tight-fitting lid, and simmer for 20 minutes

3.    Remove the lid and fluff the rice.  Add the parmesan cheese, peas, red peppers, and garlic.  Stir until the cheese is melted and well incorporated.

4.    Garnish with fresh chopped parsley, if desired.
