Summer Squash with Onions

Summer Squash with Onions
Serves 4

1 medium Zucchini, sliced into 1/4 thick 1/2 rounds
   
1/2 medium Yellow squash, sliced into 1/2 rounds

1 medium Onion, sliced lengthwise

1 tablespoon Chopped red bell pepper

1 tablespoons Safflower or corn or olive oil

1.    Heat oil in a nonstick pan. 

2.    Add onion and cook, stirring quickly for 1 minute. 

3.    Add other vegetables and cook quickly, stirring occasionally until just tender.
